La Republica del Malbec

This Malbec comes from the highest area of the traditional Lujan de Cuyo, Las Compuertas, a small terroir located at 1100 m asl.
It is made with grapes coming from a single vineyard that was planted in 1927 ungrafted. The grapes are destemmed getting naturally, by gravity, into small open oak vats where Malbec ferments with wild yeast at a temperature between 25º to 27º C. During several weeks we carry out a gentle punch down with our hands in order to obtain a slow extraction. Aging continues in French oak barrels and oak foudres for more than a year.
